Head chef Yuji Matsuzaki brings more than two decades of experience to the counter. Trained in Japan and holding a Japanese National Culinary Licence, he previously worked in Adelaide and Melbourne before realising his long-held ambition of opening his own sushi bar. At Kakizaki he focuses on accessible excellence — high-quality fish, careful seasoning and traditional methods delivered without unnecessary opulence.
The restaurant’s philosophy is straightforward. Guests place their trust in the chef (the literal meaning of omakase is “I leave it up to you”). The space itself is deliberately understated: warm timber, bamboo details, soft lighting and a calm, focused atmosphere that keeps attention on the food and the craft unfolding in front of you.


The Omakase Experience
Dinner at Kakizaki follows a classic structure. The meal typically begins with otsukuri (sashimi) and a seasonal hassun tasting plate that showcases a variety of textures and preparations — often including items such as fish cakes, tempura, chawanmushi and seasonal vegetables. These opening courses cleanse and prepare the palate.
The centrepiece is twelve pieces of chef’s-choice nigiri, prepared one by one and passed across the counter. Fish selection changes with the market and season, but recent menus have featured varieties such as King George whiting, jack mackerel, scampi, tuna, alfonsino, scallops, kingfish, swordfish, king salmon, otoro and anago.
